Editing changes the date of a note or activity which is really not helpful, is there any way this can be changed to still show as the original date? Also wondering if the date on notes could be actually timed as if I make several notes on the same day then they can appear in the wrong order. Eg Received ref appears before Sent for refs.

Normally in the CRM we would suggest using activities to record these sorts of informtion. Activities should show in date and time order and therefore you should not get the issues you're having. Please let us know if this is not the case.
